ammonia has leveled out to 0. nitrItes are really high though, around 5ppm

You have fish in the tank, correct? With all due respect (I've said this many times before in this thread), you need to keep nitrIte levels under .25 at all times. It doesn't matter if you need to do 75% water changes every day, or back to back to back changes...but it's very important you keep that level as low as possible until it zeroes out.

I would start dosing Prime at 3-5 times the normal amount during water changes, and begin using aquarium salt to help your fish combat the effects of the extremely high levels of nitrItes. NitrIte values that high qualify as an emergency situation for your fish.
