I've only had experience with java and willow moss. I'm planning to order a couple shrimp caves and have a choice of different mosses: Christmas, peacock, flame, fissidens, mini Christmas, Taiwan. I'd like to try something different...is care generally at the same for all of them?

The care is not quite the same. Some types of moss (fissidens, mini fissidens, mini xmas, coral, mini pellia, etc) will struggle or grow extremely slowly in lowtech/lowlight set ups. Many of the basic types however (Xmas, Taiwan, peacock, flame) will do fine in lowtech set ups. Will the moss that you're planning on getting be for a lowtech set up?

Two tanks, both medium lighting. Your response definitely helps, I was hoping to try Xmas and flame.

Those would both be excellent choices. They could take a little while to adjust but they'll grow fine in the long term.

You seem to know your mosses :) Which two would choose out of Xmas, Taiwan, peacock, or flame?

I'd choose flame and any of the other three. Peacock, Taiwan and xmas moss look very, very similar to each other.
