If I want a low light plant to carpet the entire bottom of my tank with what should I chose? No co2.
 
How do you keep it so it doesnt cover your whole tank? I dont want my crayfish to be engulfed lol
Also what is a low light grassy plant I could get?
 
Pygmy chain sword is a good one. It won't really take over your tank, it sorta grows in a progression. Also very grassy.

That's the only one I would know of that is low light.

Marsilea minuta as mentioned is another good one. I wouldn't worry about anything taking over the bottom of your tank if you are doing low light, it's not going to grow that fast if at all.
