Convicts not eating

So I’ve got 2 convicts in a 20 gallon tank, they have been in the tank for 3 weeks, and they aren’t eating consistently. I have disrupted the tank once when I added more plants and hiding places/ stones. At which point they seemed very stressed and their stripes were darker. But they don’t seem aggressive to each other. So I’m wondering if I can do anything else to get them to eat more. I have pellets, flakes and shrimp for them. And I rotate to make sure they can access different foods. Any ideas/ thoughts for a worried fish mum? I also have a heater a good filter and bubble maker.
 
I cycled the water for a week and a half before adding them in. I had them in a smaller tank before but I realized they wanted more space. They are pretty small and I’m not sure of the gender. I will post pictures of them and my set up down below. I thought I read online that the ph levels don’t matter too much as they are hardy. So I will get a test kit for them.
