I'm cycling my new 26 gallon and everything has Been alright considering I'm fish in cycling
Water parameters:
Ammonia: 1.00
Nitrite:0
Nitrate:5-10

I have a 10 gallon that's been established for around 4-5 months*

I took out that filter Media and put it in my new filter for the cycling tank then I just took a new bio bag for my 10G filter and put it in there, should I be worried about the new filter media in the 10G? I have lots of BB, I say that cause I see it floating and getting all over my plants and air stone. I just don't want a mini cycle to start and mess with my 10G too bad.

You need to watch and test both tanks.
You could have split the media to leave some in older tank.
I don't think you can see BB?
Just guessing though?

It has carbon pebbles in the filter media so they would go like everywhere if I cut it.

After I put that filter media in the new tank, the parameters that I want are pulling through slowly.
Ammonia:1.00
Nitrite:0.25
Nitrate:5-10 looks more like 10.
Should I be doing anything else?
I have changed the water pretty much everyday up to yesterday when I put the established filter media in. Should I do another for the ammonia to clear up or should it be fine? I'm using prime so it's not harming my fish
