Livebearers are probably the easiest to breed.
They are like rabbits, you can't stop them.
Guppies, mollies, platty's, swordtails, ect...

Algae Fighter
Shell dwellers like Neolamprologus multifasciatus aren't terribly expensive. The tank setup is pretty basic and they are easy to breed. Adults can be expensive, but soon you'll have fry to sell and make up the difference (or even a profit). 
About an inch of sand, some shells, a filter and heater is all you need....and a cheap light.
They get about 2 inches full grown and have cool personalities.
