Is this white stringy poo or is this normal healthy poo?

If your fish food is lightly colored that's probably why it's that color. It's really thick so I wouldn't call it "stringy". My guess is that either they're overfed or they just had a big meal. BEAUTIFUL fish tho!

Eliminating any physical issue with the fish, it is most often caused by what you feed them
If it appease suddenly or comes and goes it almost definitely is what / how much you have been feeding them
Most of us like t vary the food types we feed them. Some of the food types have a higher fiber content than other foods that can cause case this.
Try just feeding a good quality flake food in smaller amounts for about a week and the poop will most likely get back to normal quickly. If it does, you know that you just have to alter their diet slightly by giving them, less food,. etc.
