I have heard that seachem excel will melt a few plants including Val's. Are Val's typically fragile when it comes to any liquid co2 or is it just excel?

It's the active ingredient found in Seachem Excel, API CO2 Booster, and Metricide 14: Glutaraldehyde (or glut for short) that causes problems.
However, when introduced at lower dosages over a gradual period, it can be used with sensitive plants.

It's not liquid co2 per se. But glut is a complex carbon molecule that plants can utilize as a carbon source. As such, it's not really available in any other forms.
