My wife bought some mollies without me being present and she got a male and a female to go with our female. It would appear that the male is, umm rather eager. So my questions are what is the time frame from insemination to birth and how big will the (litter?) be?

Here's a good website about it:
Breeding Tropical Fish and Raising the Fry by AquariumFish.net.
It says that they have about a month gestation period and there can be between 12 and 30 fry per drop.
