Hat are they usually supposed to be at for a 5 gl
 
Ammonia and nitrite should always be zero in a healthy and cycled aquarium, no matter what size tank. Nitrate should be below 20 ppm.
 
Thanks.both are whet they should be.my water is VERY hard...and my gourami is not eating and he is getting white vein looking things almost on his side.almost like he is loosing color too..not sure tho

You may want to start another thread in the sick/unhealthy fish section. I don't recognize that symptom.
 
It sounds like it could be sick. Hard water is not very good for them. Try using water that is not so hard.
