Which does everyone think looks better?

Does the 2nd one give enough hidey-holes for the fish?

I was concerned it looked a bit bare now. But I think I'm getting used to it now

Having some low plants against the front glass, like in the front corners, might give you a better sense of depth without blocking the view.
