So we've got a molly that is refusing to give birth. She's looked this big for probably at least 2-3 months. Is there anything I can do to encourage her? Should I be worried? I know they can hold sperm for 6 months.

Is it a potbelly/ balloon mollie?? Are you 100% sure that it's a female? ( can't tell by pics)
 
She's not a balloon molly, and I'm 100% sure she's a female.
 
Ok, she definitely looks preggers! Lol has she been squared out for the 3 months? You can trigger her birth by doing a waterchange.
 
She's been that square for probably at least 2 months, if not more. I did a wc yesterday. Should I start doing wcs everyday? I usually do them about 2 times a week.
 
If you want water changes are never bad. But she may be bloated try feeding her some peas I hear that gets her poopin lol
 
Finally she had her babies! Unfortunately the only one i've found is dead and half sucked into the filter.
