They both look like females to me. Both seem to have the pink bellies and a lot of blue flecks over the black spot

You could different colored are much harder to sex IME. With rams females will kill each other over males and males will kill each other over females.

It's a possibility but it's HIGHLY frowned upon. Odds of producing successful fry are slim and it's not good for either breed

I think most people tend to not mix different ramirezi but I think it can be done

What would people recommend? I really like the blue rams? 125 litre tank! Should I take one female back get a male gold and a pair of blues?

I would keep the female. Two males will battle for dominance and one will probably die. If you get a pair then the femle gold will not make a difference I don't think. If you notice aggression I would bring the gold ram back and just stick with the blues or vice versa
