I'm planning to create a 10 gallon planted shrimp tank and I have heard that anubius and related plants are toxic to freshwater shrimp and should be avoided. Is there any truth to this? Most of the sources I have found in this are divided.

Haven't ever heard this. Tons of people keep shrimp and anubias together here. I would do it and not even worry. It might come from people saying that the rotted anubias rhizome stuck under the substrate may be toxic (still haven't ever heard this, and don't put the rhizome under the substrate) but I find it hard to imagine why it would be toxic to shrimp.

Just out of curiosity I would like to know where you heard this?

Like Nils said, plenty of people here keep both in harmony.
