I bought a shrimp and goby pair last week that seemed to be doing fine, now the goby has been hanging out on his own and haven’t seen the shrimp and don’t know where he is, is this normal or is my pistol shrimp dead?! I never found a body so

Either can be possible. They can sometimes split up, can get crushed by falling rocks as they borrow,...all kinds of things.
Keep an eye out and listen for the pistols clicking.
Also, they were paired? Not all gobies and pistols will pair up.

Yes they were paired, I never found a skeleton so

I have /had a little tiny one for a few years, NEVER saw it, and thought it had long died but in moving the inhabitants to a new tank found it with a small rubble pile and shells, and then after a couple years found it again.

It is in its 3rd tank, getting ready for a move to a new tank one more time and will see if it is still in there. I wonder how long they live!?
