I suppose you could do it by going to lowes or Home Depot and buying replacment filter housings and membranes and connectign them up with high pressure 1/4" tubing but to be totally honest with the amount of pressure that is created in a RO filter I dont know how confident I would be to leave one run and walk away. You should be able to get a decent RO unit from Ebay for just over the cost of the membranes and filter cartrages.
