So just to pump the breaks. I dosed with 1ppm last night.
Woke up to 0 ammonia and a good 1ppm of nitrites with a ph too low for the chart. What the heck is going on? Lol.

Are you doing large enough water changes to bring the ph and KH back up to baseline tap levels?

I'm doing about 20-35% water changes. Which is bringing the ph up usually to in the 7s.

Honestly, your cycle is done. The ammonia that your fish produce now with be very steady and the bacteria or archeae whatever it is these days will have no trouble keeping up. Even with a fishless cycle you should still stock carefully.
