I have one fry in my tank who is getting very fat and is much bigger than the other fry. The others don't seem to be growing. Anyone have any ideas on why my one fry is so fat and the other aren't growing at all?

When you feed check to see if the others are also getting food.

How are your params?

When I feed them they all swim up to the top and eat so I'm pretty sure they're all eating and I'm not sure about the parameters I haven't checked in a while although I'm pretty sure it's fine because I do regular water changes

Okay. Is it possible that i ended up with one balloon molly fry for some reason?

Yup! Livebearers have tons of fry so it is likely that one of those fry could have an altered gene which causes the balloon (scoliosis) shape. You can cull it if you don't want the balloon, but I suggest keeping it. It would make an interesting fish that probability gave you. haha
