What do I need to do?

I've got a 2.5 gallon Fluval tank, and for some reason I'm just not happy with the aquascape.

I've got a slight problem with ramshorn snails, working on that now. Should be cleared up in 1-2 weeks.

Has Anubias barteri, and nana, Java Ferns, and Java Moss in it.

Trying to add a picture now.

What do you want to keep in the tank, besides snails? That will help determine the type of plants

It currently has two shrimp, and one little cory cat. I removed the other cory cat, and successfully removed 4 other shrimp (took about an hour at night)

I'm not sure what I want in it. Thus far, everything hides so well, I never see anything in it. The two shrimp I left in are the only ones who actually stay visable nearly 24/7.
 
So with a 2.5 your choices are rather limited. I would remove the other cory (I assume you have another tank?) because they prefer to be in groups.

You could do a pretty cool Red Cherry Shrimp tank. To add some vertical elements without spreading too wide, you could use some Bacopa or Anachris. Both are easy to grow stem plants. You could try a different type of moss on the rock. I've got some Phoenix Moss in my tank. Just waiting for it to fill out a little more. It's less invasive than Java Moss and looks a little better IMO.

Yes I would also do that. Get a small colony of rcs. I think it's because of the Java moss that the aquascape looks a little messy. I would get some xmas, flame, or Taiwan moss. Those are less aggressive and look better too.

Would the Anacharis do well with this stock LED?

If I can remove that other cory, I'll put him in my 20 long with the other 5.

I'll see if I can find a different type of moss, currently both of my LFS's only carry the Java, so I'll see if I can find it online. They do carry the Anacharis, though. Also, they both have a pretty vast selection of shrimp.

I'll try and do it this afternoon, and more pictures afterwards.
 
The vertical element definitely helps.

Couldn't find any CRS. Just RCS. :(
