My two electric blue acaras are both healthy and I believe I have a male and female, over the last two days I have noticed that they will both swim round and then bite and the plants aggressively, this is the first toke I’ve seen them do this is it standard behaviour?

Yep! Mine used to pull a leaf off a java fern and swim around with it like a trophy. Theyll dig a pit and you'll have a spawn soon.
