Does anyone know if the water droplets that form on the underside of my acrylic tank cover will block light from getting into my tank?

No, the water droplets won't block the light at all. However, you may find it necessary to wipe the cover (both sides) with a damp cloth occasionally to remove algae and lime buildup - these will block the light.
