Is there a way to test driftwood to see if it will not breakdown and muck up the water parameters?

If you wondering about DW you found, Stay away from evergreen wood, i.e pine. If it's soft enough that you can press you finger nail in it I wouldn't use it.

I got it at lfs...labeled sinkable driftwood. I can put my nail in it and splinter it off in the tank...seems soft to me. Could this be causing nitrate issues

It's highly unlikely that drift wood is contributing to nitrate issues. It just doesn't decompose quickly enough to impact parameters like that.
