If you're willing to work with cichlids, I would try convicts. They are very easy to breed and they stay somewhat small for cichlids. Although they do get very aggressive once they pair up

Some gars get huge. The needle nose gar only gets around 1'3". The minimum tank size for a needle nose is 70 gallons

So I have a 56 gallon tall tank. I want to make it a planted tank with schooling fish. I also want to incorporate angelfish in the tank but I'm not sure how many I should get and what other types of fish to add. Any suggestions?

You might (key word might) be able to pull off a frontosa. They are really mellow fish and they grow very slowly. They don't have a variety of colors but they have really nice stripes that I kinda like. If you don't like a frontosa check out some zebras or peacocks.
