What type of peat do you use? Any bag from the garden centre or does it have to be specific type, such as organic so it doesnt have any fertilizer/chemicals in it?
Everyone talks about the risk of parasites with live food but if you find a good supplier, like i have, of your live food then it should not be an issue.
Besides half the fun of rays is watching them pounce on their food.
Ive been told those types of products are only useful if they have live bacteria. Some have actual helpful live bacteria that assist in cycling and others misdirect you and dont do much. But i have found that certain products help but they definately do not instantly cycles a tank.
I find that sand got sucked up into my filter and caused my impellers to degrade. But i have stingrays that really stir up the bottom so if you dont have anything to kick up the sand you should not have the same problem.
The usual rule of thumb is one inch of fish per gallon. That defers from fish to fish for example goldfish need 2" per gallon because they are dirty buggers. So with your 125 you can have 125 inches of fish. But remember, fish grow up! So when you buy that little guy at the pet store research...
Retics are very very picky eaters. Hopefully yours is still with us and you found a food it likes.
But if you are still having troubles try frozen blood worms or even better live blackworms. They love live black worms. Its like cst nip for rays.
150 will be too small for the motoros but have you ever thought about reticulated aka teacup stingrays?
They grow only to about 12-14" disc diamter and would be fine in a 150 as long as its not tall style of tank.
And lastly, their sting.
I have never been stung but if by chance you do get hit place your affected area under as hot water as you can handle. This is because their venom breaks down with heat. So the hotter the water the more it will break down and then seek medical attention. But be careful...
Also i wouldnt be too concerned about him eating your guppies. If you look at their mouths they are tiny.
