Nitrate removal is the main reason for skimming but yes it helps remove phosphate also along with trace elements.

I disagree with never turning off skimmer. I have a 180 and all my softies were looking flat and dull in color. I turned my skimmer off for 3 days because since I've started the tank in July I'm never had any trace of nitrates. Within 3 days my colors have come back and they all filled back up...

We have a guy in our local reef forum here in so cal that makes it and sells it. He puts cyclopeeze in it also. Anything that a fish or coral would eat should be in there to some extent. It can't hurt. An what's good about making it is you don't have all the filler crap.
