Ok, just added two more fish as I was told I need more bioload

As I have stated, I got my tank up and running Saturday night and added driftwood and plants from established tanks that night. Well, yesterday I added three guppies with the tetra safestart. I was then told I need additional fish for extra bioload to complement the safestart so I just added two red wag platies. One of them is missing though. Went and hid and has not come out.

I just tested the water, Ammonia is 0, Nitrite is 0, Nitrate is 0 and PH is 7.8.

Any thoughts on why I do not have any Nitrate? Also, 7.8 PH is on the high of acceptable. I know in the pool industry we put acid in the water to lower the PH, but what is the safest way to lower the PH in aquarium?

I have about 10 plants. Anubias and Java ferns. very little java moss.
 
Upon googling it appears i do not have nitrates because my tank is too clean. Not enough fish?
