I bought 3 peppermint shrimp yesterday and now noticed 1 of the shrimp only has 1 leg on his left side. Question: do their legs grow back?

Yes they do over time. After they molt it hould come back/start to come back

Was he like that when you bought him? If not you may need to find out who the offender is to keep from happening again.

I wasn't that attentive while purchasing, I figured they would be fine, and didn't notice until I....noticed lol, but I searched around the tank and didn't find anything
