Just tested water quality, ammonia is 0, nitrite is 0 & nitrate is at 40. Should I do a pwc, I just did a 50% on Sunday or should I add stress Zyme to see if it lowers?

Do another water change. 50% will get it down to 20 or so. I personally would do a 75% to give your tank a little more time till you have to do a water change.

Just so you know stress zyme will not lower your nitrates, the main way to get rid of nitrates is with either live plants or waterchanges. I would keep doing waterchanges until your nitrates are at least 20 ppm but the less nitrate the better, then continue to do waterchanges regularly and as needed when the nitrates build back up.
