When to do water change on a cycling tank?

The ammonia has been off the chart for about 4 days now. Cycling with dead/live rock - good looking porous stuff, but no life. That's the usual from my LFS. Big tank, cured and uncured rock, with high ammonia.

On mine now, there is a CPR bakbak running, heater @ about 76 degrees, with a PH running in a 40g breeder.

Anyway, should I begin changing water now? What % and how often (or w/certain indicators).

Don't want to delay the cycle, but want to do what's recommended on the changes
 
If there is no life on the rock than just wait it out and do a good change after ammonia and nitrites hit zero. This change will reduce accumulated nitrates. I recommend 25% but others say up to 50%.
