I just set up a planted tank and used the ada power sand and soil. I did it a week ago and was told it would release a lot of ammonia into the tank. I tested it a week later and the ammonia is over 8ppm. I know this isnt good for cycling because the ammonia is to high. What should I do? Should just do water changes to keep it around 3ppm

Water changes will reduce the ammonia, but it will likely creep back up again as the ADA soil continues to release more. You'll just have to keep testing and changing water as needed until things level out and stabilize.
