At my LFS there's a tank with a blue crayfish in it, and next to it a tank with a blue australian lobster. The lobster has much smaller claws, but I'm guessing it still wouldn't be smart to put it in with fish...?

if you're adding gravel or filter media from the old tank into the new, make sure the bacteria have a food source..they need ammonia to survive. The 'good stuff' as you call it is not in the water, but in gravel and filter.

keep adding ammonia until you get fish otherwise the bacteria will starve and congrats on the cycle!
