So if I took the red zebra off and just upped the numbers of the other 3 species what would you suggest?

The other species I have available to me are:
Pseudotropheus demansoni
Pseudotropheus johanni
Labidochromis sp. (Perlmutt)
Pseudotropheus elongatus
Labidochromis caeruleus Nkali
Pseudotropheus flavus

That pretty much covers it from the 2 LFS I have.

How many fish is safe to add at a time max in order to make sure I don't crash my bio filter?

How did you do your cycle? If you dosed with ammonia to 4.0ppm and the cycle did truly complete (ammonia and nitrites are at 0 within 24 hours of dosing) then I think you should probably be able to fully stock the tank at one time. The point of dosing to 4.0 in cycling is to build up a very high bioload so that the filter is capable of handling a fully stocked tank. With cichlids I believe it is advised to fully stock the tank all at once so that the group grows together and establishes their territory. Maybe someone more experienced can verify if I am correct here.

Something to keep in mind
If you want to keep some of the fry I wouldn't add a whole lot more.
