I've ordered my supplies for my tank and will begin the fishless cycling process the beginning of next week. I know that some people recommend NOT adding live plants to the tank while doing a fishless cycle. Would it be okay to add some driftwood or would the ammonia used during cycling hurt it or possibly retain some of the ammonia making it hard to clear?

I would add the driftwood. It will be fine. In fact I added DW to my tank during a fishless cycle.

I would do the same as mentioned above. First setup hardscape (DW, rocks), then plants, then proceed with the fishless cycle.
