You could go with a nice thick pile carpet for softness. Dont forget the underlay!!!
No in all seriousness you need to give details on what light levels you have. As carpeting plants are at substrate level, they tend to need higher light levels. More water for the light to penetrate
Good looking tank! If you could let us know your lighting that would help. Also, I think some hardscape (Rocks, driftwood) would really help your aquarium pop.
Assuming you add the light and co2, I'd go with DHG (e. parvula). It's a little easier than HC (dwarf baby tears) or UG, for instance. Just make sure to have a good fertilizer regimen as well.
