I recently upgraded to a 55 gallon and I want to change up my stock some to get fish I like better. I have an LFS that is going to take my unwanted fish. Since I can't get aqadvisor to come up to see it's take, I'd like some feedback on the numbers.

Keeping:
1 koi angelfish
2 honey gourami
2 GBR
5 panda cory

Wanting to add:
6+ neon dwarf rainbows
6+ threadfin rainbows or celebes rainbows
2-3 more panda cory

Any thoughts on how many of each rainbow would work well without overstocking?

Threadfin Rainbowfish are excellent fish. You could keep them in a large group of 10 (5 males to 5 females) if you wanted to. You could add 2 more Angelfish too. The Dwarf Neon Rainbowfish should be fine.
