Would I be able to put 1 convict in a 29 gallon tank with some Cory catfish? I have emerald cories and I wanted to add a convict.

50/50. Depends on the temperament of the convict. I've seen them in community setups with smaller peaceful fish, and I've also seen them try and terrorize 4-8 foot tanks with aggressive fish that are 2-5 times larger than themselves.

If you're really set on getting a convict, make sure you have a backup plan (such as a LFS being able to exchange it for another or trade it in) if things go sour.

How would 1 female be? Not trying to breed, just want a centerpiece fish

A female would be a safer bet than a male thats for sure.

I had a 1.5 inch female convict that beat up 2 adult oscars I had in a 6 foot tank. Get Honduran red point if you can. They tend to fight amongst themselves and leave everything else alone. But as stated it does depend on the fish. A convict might be fine or it might have everything murdered in an hour.
