If you have nitrite you still in your cycle and give it time. It will convert in time. Don't do water change until cycle over. Then do few big changes to get nitrates down.
If your tank is established then you may have a ammonia spike. Maybe lost a fish?
If you are still in cycling mode then you just leave the tank as is. The ammonia and nitrite should go to 0 all by themselves with no water changes needed until it's finished.
