Okay...so I've been trying to cycle with a fish in my tank as my ammonia source...right now I have a pH of 7.6, ammonia of 0, nitrite of 2-5 ppm, and nitrate of 0.

It's been like this for about 2 weeks now...no ammonia levels, always nitrite, and still no nitrate.

I just do water changes once or twice a day of about 50% to keep the nitrites down...always works, but I'm wondering if I'm doing this right.

Do I just have to wait for nitrates or did I do something wrong..?

Sounds fine to me. You may want to keep a low level of salt in the water to alleviate nitrite toxicity but otherwise it sounds like you are on the right track and just need to wait it out.
