I have my 55 gal tank up and running, once it is done cycling, what is the best way to transfer the Cichlids from their current home to their new home?

If I have them in a 5 Gal bucket to transfer what can I do for the transfer in the new tank?

Smaller fish I am able to put in a bag and have them float in the bag for 15min or so, but looking for a more efficient method

I would do drip acclimation in the bucket. Take an airline hose and get the siphon going from your new tank into the bucket. Use a clothespin, zip tie, or bread tie to limit the flow to a drop every so often. No exact science, you just want the water to be added slowly over time. After about an hour or so net the fish and put them in the new tank.

There are plenty of articles and how-to's on google for drip acclimation.
