After changing my aquascape, my yellowtail dwarf angelfish has been breathing heavily. My pair of clowns seems to be okay but the angelfish is not. The good thing is that they are eating. Is this due to stress?

It's possible that you stirred up the sand and released some nitrite, which isn't good for the fish. Hopefully it wasn't a lot so he should be fine in a few days.

I agree that moving the rock around probably stirred up some ammonia. I would immediately would do a 33% PWC.

At the first sign of stress, test Ammo and Nitrite and Nitrate.

Try adding Seachem Prime. It says it detoxifies ammonia and nitrite in addition to dechoirinating
