Anubias is a definite yes for goldies. It's the one plant in my tank they seem to stay away from, all my other plants have bite chunks missing. Anubias are easy to take care of, easy to propagate
As for sand, I have a mixture of sand and gravel right now but I'm thinking of switching over to pool filter sand, with a thickness of 2-3 inches.
As for marine sand, I'd recommend not to use it for freshwater cuz it'll raise the pH
