Thinking of getting a 5-10 gallon shrimp tank

So I am thinking of getting a 5-10 gallon shrimp tank as my very first tank and I am wondering what kind of plants should I add to it and if in the future i may add a guppy or 2. Also how do I get the PH levels where i want them to be it confuses me Ive tried to watch videos on it I just dont get it. Also what is an all in one tank that someone can recommend me?
