So yesterday was my water change day for my 5.5g and since it was the first after the end of my cycle, I did about a 90% WC, refilled and thought all was good. I also rinsed out my filter and sponge. (in tank water of course)

This morning, I noticed a bacterial bloom, but I know those will go away on their own. My big question is now on my params test, I'm showing

6.8/.25/0/5-10.

What would make ammonia show back up? Did I remove too much water and cause a mini cycle?

Probably rinsing your filter did it. It just doesn't have a huge, stable colony of BB going yet. I wouldn't rinse it till it gets really gunky. Then you should be good to rinse it at regular water changes. Try putting a pinch of crushed up fish food in your tank to get things rolling again. It shouldn't take long.

I agree with Holly. Although cycled, your media is not yet considered mature.
