I’m writing an information book on freshwater fish. So far I’m including the following topics:

Scientific Name
Origin
Size
Lifespan
Temperament
Care level
Tank size
School
Tank Mates
Ph
Temperature
Substrate
Light

What other topics will I need to include?

Having published eight books (on birds), I can offer some advice:
You need a Preface that explains why you are writing the book, and an Introduction that tells the reader what the book is about.
If you are writing it on a fish-by-fish basis, then Family or Group, Scientific Name, and Common Name are all appropriate.
Origin? Do you mean evolutionary origin or where they are found in the wild?
Lifespan? In the wild or in a tank?
Care level? You mean like hard or easy to keep?
School? What does that mean? How about shoals or groups?
Ph? You mean pH. Always pH, even at the beginning of a sentence.
Temperature, substrate, light can be handled a number of ways.
How about a glossary?
Diseases?
Water chemistry? Cycling?
Filtration?
Conditioning, breeding, raising young?
I'm sure there are other topics and ways to handle the topics you listed. There are bunches of books on tropical fish. How will yours be different?

Or where can I find them since I see that they are published

Yes, all are published. A couple are old and out of print, but you can find Birds of Bidwell Park, Beaks, Bones, and Bird Songs[/I], and Latin for Bird Lovers, Birds of ]New England, and maybe Amazing Birds on Amazon. You can also search Amazon for my author name, Roger Lederer
