If you want colour you could try dwarf rainbow fish. The Pacific forktail blue eyes are my favorite. Of course livebearers (especially) platys have a lot of colour. Tetras are a nice cheaper option. Tiger barbs are beautiful when full grown against a heavily planted tank.
Or you can go in the other direction.
Make a blackwater tank. Lot of tannins and keep black neons in it. There are a lot of non-colourful types of fish that are beautiful in their own way as well.

I’m doing an apisto pair with some tetras, cherry barbs, pencil fish, and cories in a 40 breeder, you could something similar.

Apisto’s are beautiful fish! I got a pair of rams and 3 glass catfish so far! No room for a baby sea lion sir lol
