The only challenges with a hex tank I see vs. a traditional long tank is swimming space for larger fish. You also mentioned lots of plants, I believe the hex is taller and might require a little stronger lighting as a result.
The 60 gal hex will have less surface area for oxygen diffusion. It's something to keep in mind while stocking the tank. This type of tank has more limitations than others, due to the smaller footprint. Plan carefully and don't over do the bottom/mid dwellers--space will get cramped more quickly than a rectangular tank.
