What is a good level of Nitrite when cycling? What is the danger levels?

Any amount is potentially dangerous if there are fish present, though most 'cycling fish' should be able to withstand the nitrites if they are controlled. (I'm assuming you are cycling with fish since you're inquiring about danger levels). If you use Prime to condition your water, you can also use it to 'detox' the Nitrite in an emergency as per the bottle's directions.

If you are worried about your fish suffering from brown blood disease, you can also use aquarium salt to try to hold it off.

I would try to keep nitrites at or below .5ppm. As Rok said, definately use some aquarium salt if you fish show any signs of nitrite poisoning:
Gasping at the surface, brown gills, lethargy, etc.

Well it was either at .5 or 1 it was hard to tell. I just did a 30% pwc I am going to test it later.

I usually add a teaspoon of aquarium salt for every 3 to four gallons I take out during the pwc. So I took out 8g this time so I added two teaspoons
