Yes it’s normal because
co2 in tap water is acidic. When it leaves the water after a while the pH goes up. pH value of 8.0 is perfectly fine, no need to worry. Lastly, nitrite of 0.25 is not toxic, though it should be 0 so a water change is always the best policy.
