Amano shrimp and dying fish

Have noticed whenever there has been a sick fish.... the shrimps I have, in a way like in wild, sense that and start closing in and just wait for the fish to give its last breath.

My question is, do I let them snack on it or take the fish out, when they had their fill or take it out immediately?

Yes, pull it out immediately. Don't let it sit in there and foul up your water parameters.
