Forgot to write down the name of this plant when I got it. They were growing like a tall-ish plant at the store, which is part of why I picked it. But on looking at it closer now that I've had it for awhile it seems to be rooting all along the stem, like it wants to be a creeper type. ( sorry, don't know all my jargon yet, bear with me!)

So should I poke the new roots down into the gravel and it will grow up AND sideways?

That is cabomba caroliniana. You can plant it or leave it floating, and it can be cut anywhere along the stem and replanted as needed.

To make sure I understand about the cutting... Cut the stem below where roots are coming out and replant? I didn't know this could be a floating plant, so thanks for that!

It really doesn't matter. Roots or not, you cut off a piece and plant it, and it will grow.
